What is so special about our "akide" candies?
During the Ottoman era, sugar took on a unique form, nowadays known as “akide” candy. Symbolizing loyalty, it was offered by Janissaries to the Imperial Council in ceremonies showcasing their allegiance to the Sultan. Today, this tradition lives on at Cafer Erol, where vibrant akide varieties are displayed in signature brass-lidded jars. What sets our akides apart is the meticulous craftsmanship: premium sugar, nuts or fruits sourced from select regions, and the addition of honey for enhanced flavor. Prepared using century-old techniques, sugar is boiled in large copper cauldrons, blended with ingredients like hazelnuts or pistachios, and kneaded on marble counters before being cut into perfect pieces.
